One Pan Baked Balsamic Chicken and Tomatoes (Whole30 & Paleo)
There is nothing better than a one pan meal that does not disappoint in flavor and this One Pan Baked Balsamic Chicken and Tomatoes is no exception. I wanted to make a simple recipe that I could throw together on a week night when I didn’t have time to cook but still wanted something nutrient dense. It truly takes less than 5 minutes of prep and then you pop it in the oven and get back to other priorities. And if you have never had baked cherry tomatoes, I promise you will want to try them. When the cherry tomatoes are baked they pop and there is a burst of flavor with a little sweetness and they are really addictive.
For the balsamic glaze, I either make a homemade glaze or I try to find a glaze that is not packed full of sugar or added cornstarch. It’s also really simple to make at home by just simmering balsamic vinegar.

One Pan Baked Balsamic Chicken and Tomatoes (Whole30 & Paleo)

- 4 chicken breasts
- 1 8-oz package of cherry tomatoes
- 1 tsp italian seasoning
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/8 tsp red pepper flakes
- 1 1/2 tsp balsamic glaze
- 1 tsp fresh basil
Instructions
- Preheat the oven to 400°F (200°C).
- Place chicken breast in baking pan and surround with cherry tomatoes.
- Season chicken with Italian seasoning, red pepper and salt and pepper. Season tomatoes with a generous serving of salt and pepper.
- Evenly drizzle olive oil and balsamic vinegar over chicken and tomatoes and place in oven. Bake for 20 minutes or until internal temperature of chicken is 165°F (74°C) and cherry tomatoes are bursting.
- Drizzle chicken and tomatoes with balsamic glaze and garnish with basil.
- Serve and enjoy hot!
