Arugula Salad with Figs, Caramelized Onions and Walnuts (Whole30, Paleo & Vegan)

This Arugula Salad with Figs, Caramelized Onions and Walnuts is a perfect salad when figs are in season. The sweetness of the figs pairs perfectly with the bitterness of the arugula, the caramelized onions and the crunch of the walnuts. If eat dairy, you can also toss some cheese in it.

I topped this salad with a homemade sugar free balsamic vinaigrette! If you are currently buying pre-made salad dressings, give this one a try and see how simple and cheap a great salad dressing can be with ingredients you already have in your pantry and fridge. Pre-made salad dressings are often filled with industrial processed oils and lots of undesirable ingredients. You can make a big batch of this dressing and it will last for about a month in the refrigerator.

Arugula Salad with Figs, Caramelized Onions and Walnuts (Whole30, Paleo & Vegan)

Ingredients

Salad

  • arugula
  • 1 onion thinly sliced
  • 1 tbsp ghee
  • 1/2 tsp salt
  • 1/2 cup walnuts
  • 2 figs quartered

Dressing

  • 1 tbsp olive oil
  • 1/4 cup balsamic
  • 1/2 tbsp dijon mustard
  • 1/2 tsp basil
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp pepper

Instructions

  • Heat ghee over medium heat in a sauté pan. Add onion and cook for 5 minutes. Reduce heat to low and add ½ teaspoon of salt. Cook, stirring frequently until onions are very soft and golden brown (about 20 minutes).
  • Mix balsamic vinegar, dijon, and the rest of the seasoning. Whisk until dressing is combined. 
  • Add arugula to a bowl, toss with dressing and top with caramelized onions, walnuts and figs. 
  • Enjoy!
