Cucumber, Tomato & Red Onion Salad Recipe (Whole30, Paleo & Vegan)

I am always looking for different ways to get in lots of veggies and this Cucumber, Tomato & Red Onion Salad is just that! I love to make this salad and put it in the fridge and snack on it for a few days. The dressing is really light and refreshing and packed full of flavor and nutrients. I personally like to use english cucumbers for this recipe as they have more flavor and less seeds. They are so crunchy and pair perfectly with the crunchy onion and the cherry tomatoes. Cucumber, Tomato & Red Onion Salad (Whole30, Paleo & Vegan)

Ingredients

  • 3 tbsp red wine vinegar
  • 1 tbsp olive oil
  • 1/2 tsp sea salt
  • 1/2 tsp garlic powder
  • 1/2 tsp ground pepper
  • 8 oz cherry tomatoes halved
  • 1 medium cucumber diced
  • 1 small red onion diced
  • 1 medium avocado cubed
  • Fresh dill and green onions

Instructions

  • In a large mixing bowl, combine sliced tomatoes, cucumber, red onion and avocado.
  • In a small bowl, whisk red wine vinegar, olive oil and seasonings.
  • Drizzle dressing over top of the veggies.
  • Top with fresh dill and chives and enjoy!
