Baked Salmon in Foil with Lemon and Rosemary (Whole30 & Paleo)

If you want to keep your salmon as juicy as possible, this baked salmon in foil with lemon and rosemary is the best option. By making a foil wrap, you are locking in the flavors and keeping the moisture in. This is the most basic salmon recipe but it never disappoints. If you need something easy on a busy weekday night or a lazy Sunday, this is your recipe. You can serve it with a salad, veggies or rice or quinoa (depending on your diet). Keep in mind, the cooking time really will vary on your oven and the thickness of your salmon.

Baked Salmon in Foil with Lemon and Rosemary (Whole30 & Paleo)

Ingredients

  • 1 lb wild caught organic salmon
  • 1 tsp olive oil
  • 1/2 tsp garlic powder or fresh garlic
  • 1/2 tsp dried rosemary
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 2 lemons
  • Pepper to taste
  • 2 fresh rosemary sprigs

Instructions

  • Preheat your oven to 350°F (175°C) and line a large baking dish or rimmed baking sheet with a large piece of aluminum foil.
  • Place room temperature salmon on aluminum foil. Drizzle the salmon with olive oil and brush with so that the salmon is coated evenly. Sprinkle salt, garlic, paprika, rosemary and pepper over salmon and rub to coat. Drizzle juice of 1 lemon over the seasoned salmon.
  • Arrange 2 sprigs of the rosemary on salmon and lay lemon slices on top of the salmon.
  • Fold the sides of the aluminum foil up and over the top of the salmon until it is completely enclosed. If your piece of foil is not large enough, place a second piece on top to form a sealed packet. Leave a little room inside the foil for air to circulate.
  • Bake the salmon for 15-20 minutes, until the salmon is completely cooked through at the thickest part. The cooking time will vary based on the thickness of your salmon and your oven.
  • Open foil packet and serve immediately. Top with additional lemon juice if desired.
