Baked Cajun Salmon in Foil (Whole30 & Paleo)

Intimidated to make salmon? This Baked Cajun Salmon in Foil is such a simple recipe to boost your confidence as as a chef by keeping your salmon juicy and packed full of flavor. By making a foil wrap, you are locking in the flavors and keeping the moisture in. It never disappoints and it only requires an oven, a beautiful piece of salmon and 5 minutes of preparation. I like to serve this with roasted potatoes and a green vegetable for a well balanced and delicious meal! This recipe could also be used on any fish you like but the salmon can definitely stand up to the flavor that comes from the cajun seasoning.

I always use my Cajun Spice Mix Recipe instead of buying a store bought mix. It’s a super easy mix of spices that we all typically would have on hand at home.

Baked Cajun Salmon in Foil (Whole30 & Paleo)

Ingredients

  • 1 lb wild caught organic salmon
  • 1 tbsp olive oil
  • 1 1/2 tsp cajun seasoning add more for an extra kick
  • Salt to taste
  • Zest of 1/4 lemon
  • Lemon slices and fresh parsley to serve

Instructions

  • Preheat your oven to 350°F (175°C) and line a large baking dish or rimmed baking sheet with a large piece of aluminum foil.
  • Place room temperature salmon on aluminum foil. Drizzle the salmon with olive oil and brush with so that the salmon is coated evenly. Sprinkle with cajun seasoning and additional salt if desired and coat evenly. Sprinkle the zest of lemon over seasoned salmon.
  • Fold the sides of the aluminum foil up and over the top of the salmon until it is completely enclosed. If your piece of foil is not large enough, place a second piece on top to form a sealed packet. Leave a little room inside the foil for air to circulate.
  • Bake the salmon for 15-20 minutes, until the salmon is completely cooked through at the thickest part. The cooking time will vary based on the thickness of your salmon and your oven.
  • Open foil packet and serve immediately. Top with parsley and additional lemon slices.
