Greek Quinoa Salad (Vegan & GF)

Ingredients

Salad Ingredients

  • 3 cup cooked quinoa
  • 3/4 cups cherry tomatoes halved
  • 1/2 cup cucumber chopped
  • 1/2 small red onion diced
  • 1/2 cup dairy free feta
  • Fresh dill for serving

Vinaigrette Ingredients

  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • 1/2 lemon juiced
  • 1 garlic clove minced
  • 1/2 tsp dried oregano
  • 1/4 tsp dried dill
  • Salt and pepper to taste

Instructions

  • To make the dressing, whisk together olive oil, red wine vinegar, lemon juice, garlic, mustard, and oregano in a small bowl. Season with salt and pepper, to taste.
  • In a large bowl, add cooked quinoa, cherry tomatoes, cucumber, onion and feta. Drizzle dressing over top and toss to combine. Season with salt and pepper to taste if needed.
