Heat ghee over medium heat in a sauté pan. Add onion and cook for 5 minutes. Reduce heat to low and add ½ teaspoon of salt. Cook, stirring frequently until onions are very soft and golden brown (about 20 minutes).
Mix balsamic vinegar, dijon, and the rest of the seasoning. Whisk until dressing is combined.
Add arugula to a bowl, toss with dressing and top with caramelized onions, walnuts and figs.
