Preheat oven to 400°F (200°C) and line a baking sheet with aluminum foil.
Place all sliced veggies on sheet pan.
Whisk together olive oil with all the spices.
Drizzle evenly over veggies and toss together to make sure veggies are evenly coated.
Bake in the oven for 25 minutes, until veggies are soft and cherry tomatoes have burst.
Serve hot with your favorite protein or add to your meal prep for the week.
