Sheet Pan Roasted Veggie Recipe (Whole30, Vegan & Paleo)

Ingredients

  • 8 oz mushrooms sliced
  • 1 pint cherry tomatoes
  • 2 large zucchinis sliced
  • 1 large red onion sliced in large chunks
  • 1 red bell pepper sliced
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/4 tsp dill
  • 1/4 tsp oregano

Instructions

  • Preheat oven to 400°F (200°C) and line a baking sheet with aluminum foil. 
  • Place all sliced veggies on sheet pan. 
  • Whisk together olive oil with all the spices.
  • Drizzle evenly over veggies and toss together to make sure veggies are evenly coated. 
  • Bake in the oven for 25 minutes, until veggies are soft and cherry tomatoes have burst. 
  • Serve hot with your favorite protein or add to your meal prep for the week.
