Sheet Pan Roasted Veggies (Whole30, Vegan & Paleo)

Need a recipe to meal prep for the week and want to add more veggies to your weekly meals? This Sheet Pan Roasted Veggies recipe is the perfect addition to your meal prep routine or just an easy and tasty side dish. I know getting veggies into every meal can be super difficult and meal prepping is definitely a good way to make it a little easier. But raw veggies or plain sweet potatoes get boring really quick.

To me, the cherry tomatoes are the best part. They burst in your mouth and are perfect addition to this veggie mixture. This recipe could also be easily adjusted with any veggie swap or addition you would like! For meal prep, this dish would be perfect with quinoa or brown rice and some chicken. Easy, simple and healthy!

Sheet Pan Roasted Veggie Recipe (Whole30, Vegan & Paleo)

Ingredients

  • 8 oz mushrooms sliced
  • 1 pint cherry tomatoes
  • 2 large zucchinis sliced
  • 1 large red onion sliced in large chunks
  • 1 red bell pepper sliced
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/4 tsp dill
  • 1/4 tsp oregano

Instructions

  • Preheat oven to 400°F (200°C) and line a baking sheet with aluminum foil. 
  • Place all sliced veggies on sheet pan. 
  • Whisk together olive oil with all the spices.
  • Drizzle evenly over veggies and toss together to make sure veggies are evenly coated. 
  • Bake in the oven for 25 minutes, until veggies are soft and cherry tomatoes have burst. 
  • Serve hot with your favorite protein or add to your meal prep for the week.
