Cucumber, Tomato & Red Onion Salad (Whole30, Paleo & Vegan)

Ingredients

  • 3 tbsp red wine vinegar
  • 1 tbsp olive oil
  • 1/2 tsp sea salt
  • 1/2 tsp garlic powder
  • 1/2 tsp ground pepper
  • 8 oz cherry tomatoes halved
  • 1 medium cucumber diced
  • 1 small red onion diced
  • 1 medium avocado cubed
  • Fresh dill and green onions

Instructions

  • In a large mixing bowl, combine sliced tomatoes, cucumber, red onion and avocado.
  • In a small bowl, whisk red wine vinegar, olive oil and seasonings.
  • Drizzle dressing over top of the veggies.
  • Top with fresh dill and chives and enjoy!
