Greek Quinoa Salad (Vegan & Gluten Free)

I love quinoa salads and this greek quinoa salad is no exception. It is light and flavorful while also being filling. It is a perfect side dish with my chicken shawarma recipe. I always make a big batch, but it doesn’t last long around our house.
As far as the feta, my favorite dairy-free feta is Viola Life Foods Feta. I personally think that it taste so much like feta and it has the same wonderful texture. Give the recipe a try and leave a review below!

Greek Quinoa Salad (Vegan & GF)

Salad Ingredients
- 3 cup cooked quinoa
- 3/4 cups cherry tomatoes halved
- 1/2 cup cucumber chopped
- 1/2 small red onion diced
- 1/2 cup dairy free feta
- Fresh dill for serving
Vinaigrette Ingredients
- 1/4 cup red wine vinegar
- 1/4 cup olive oil
- 1/2 lemon juiced
- 1 garlic clove minced
- 1/2 tsp dried oregano
- 1/4 tsp dried dill
- Salt and pepper to taste
Instructions
- To make the dressing, whisk together olive oil, red wine vinegar, lemon juice, garlic, mustard, and oregano in a small bowl. Season with salt and pepper, to taste.
- In a large bowl, add cooked quinoa, cherry tomatoes, cucumber, onion and feta. Drizzle dressing over top and toss to combine. Season with salt and pepper to taste if needed.
