Green Goddess Dressing

This green goddess dressing is the new staple in our house. We make this in a large batch and use it to dip vegetables or crackers, drizzle over salads or add to our favorite protein dish. Its creamy, salty, herby and a little tangy and it’s also extremely nutritious. The yogurt is a great source of protein to add to any dish and the variation of herbs is a great addition of micronutrients. This recipe could also be substituted with dairy free yogurt for a vegan or dairy free diet.

Equipment
- 1 blender or food processor
Ingredients
- 2 cups organic plain yogurt (450 g)
- 1/2 bunch basil
- 1/2 bunch tarragon
- 1/2 bunch cilantro/coriander
- 4 green onions/spring onions ends removed
- 2 garlic cloves
- 1 tbsp capers
- 1/3 cup olive oil
- 1 tsp sea salt
- 1/2 tsp ground pepper
- Juice from 1/2 lemon
Instructions
- In a food processor or a blender, combine the yogurt, mixed herbs, garlic, capers, lemon juice, olive oil, salt, and pepper. Pulse until well combined. season with more salt and pepper to taste.
Servings: 2 cups
