Pancetta and Truffle Oil Brussel Sprouts (Whole30 & Paleo)

Looking for a way to spice up your brussel sprouts? Add some pancetta or bacon and a dash of truffle oil to make these Pancetta and Truffle Oil Brussel Sprouts. They are crispy, salty and the perfect side dish for any occasion. These are especially good for a holiday meal as a fun way to add a green vegetable to the plate.

If you don’t have any truffle oil on hand, there are many places you can order it online. I typically always find it at a locals farmer’s market but Truff is a popular company that sell’s it for delivery and the ingredients are just olive oil and truffles so it is Whole30 and paleo. Also, make sure when picking a pancetta or bacon, to look at the ingredients carefully because most bacon has sugar in the ingredients which is completely unnecessary. Applegate Farms is an organic meat company that has great Whole30/Paleo options and can be found in most US grocery stores.

Pancetta and Truffle Oil Brussel Sprouts (Whole30 & Paleo)

Ingredients

  • 1 cup sugar free pancetta or bacon diced
  • 12 oz brussle sprouts halved
  • 2 shallots diced
  • 1 garlic clove minced
  • 1/2 tsp truffle oil
  • salt and pepper to taste

Instructions

  • Fry pancetta in sauté pan until crispy and remove from pan, leaving the pancetta grease. 
  • At medium heat, add diced shallots and sauté for 2 minutes before adding garlic. Stir garlic in for 1 minute and season with a generous amount of salt and fresh cracked pepper. 
  • Add in halved brussel sprouts and stir to combine. Cover and cook for 10 minutes or until brussels are cooked through, stirring often. Add more salt and pepper to taste. 
  • Remove lid and sauté to add browning to the brussel sprouts for about 5 minutes. Add pancetta and truffle oil into the pan. 
  • Cook for 2 more minutes, remove from heat and enjoy!
